The Professor gave a talk in both English and Thai about both his work and the infancy of organic farming in Asia. Afterwards he gave us each a copy of his book "Mushrooms of Thailand."

One of the Professor's big efforts is to teach Thai farmers how to compost instead of burn, and to use natural soil amendments. According to him, many of the fields in Thailand are devoid of much organic matter, and some have a measured pH of 3.5!
After the talk, we went out in his fields and picked food for the clinic. This particular vegetable is called "morning sprout."
